Morconitos

    • 1/2 kilo lean beef sliced into strips about 1 1/2 inches x 3 inches
    • 3 pcs calamansi or juice of 1/2 lemon
    • 3 Tbsp soy sauce
    • 1 tsp pounded garlic
    • 1/4 tsp black pepper
    • 4 pcs chorizo, julienned
    • 4 hard-boiled eggs, sliced into eighths lengthwise
    • 1 pc carrot, peeled and julienned
    • 2 pcs whole pickles, julienned
    • oil for frying
    • 5 cup ( or more ) water
    • 1 bay leaf, crushed
    • 1/4 cup onions chopped
    • 1 large can tomato sauce
    • 1 (8 oz) bottle 7-UP
    • 1/4 cup grated cheese (optional)

    Marinate beef in calamansi or lemon juice, soy sauce, garlic and pepper for at least 30 minutes. On a strip of beef, arrange a piece each of pickle, carrot and egg. Roll tightly and secure with a plain wooden toothpick.

    Fry beef rolls in oil. Add water, bay leaf, onions, tomato sauce, 7-UP and salt and pepper to taste. Simmer until the roll is tender. Add grated cheese, (if used), towards the end of cooking.
